Pre Match meals
The Limey and his traveling crew are arriving in Winnsboro on Sunday sometime. I think that Innocent Mary will be here Monday or Tuesday. The Slaughters are scheduled to arrive on Tuesday. Donnie and I are planning on cooking beaver on Tuesday night in honor of the Limey. If anyone else is coming in early, please let me know.
I have a beaver problem on my hunting property and it is being trapped as I write. The trappers are going to save a couple for us to cook.
We may add some other type of game to the larder. I am sure that Limey will keep you up to date on a daily basis.

I tell ya, it has been a long time since I had a good plate of beaver (trying to avoid the obvious off color puns). Rank it up there with fried squirrel heads. Add a bit of corn bread with Mayhaw jelly or Steens syrup and then your talking.

Reminds me of the time Mom ( a Chicago Yankee) proudly served boiled cows tongue for dinner and explained it was a delicacy. Seems like I quietly ate peanut butter that night...

Beef tongue! Yor Momma must have grown up with my wicked stepmother, who also used the same line.
Duckgumbo, squirrel sandwich for your upcomming garden party. Slow cook the squirrels with garlic and onion until the meat comes off the bones. Remove bones and skin and toss the soggy onion and garlic. Simmer again with your favorite barbeque sauce a while. Serve on bun just like barbeque pork. Plan on one squirrel per person. Mmmm.

If I have any squirrels in the freezer, we would definitely eat them. I do have a few coons in the freezer and may cook them them over sweet potatoes one evening!

I just got off of the phone with LImey. He told his wife that we were having beaver and she was in shock. I did talk to her and inform her that we were not kidding and also will have coon, gar fish, and also boiled crawfish.
