Night owl on us here, you should be at least 4 hours ahead of me!!! But then I am still at work...going to be a long evening, as it is good calibration weather today.
Height of rings, easy for us, I just tell people to try differnt guns at a match. In your case I would suggest you try normal standing position with rifle in hands, head where you would like it on the comb of the stock, and get another person to measure height to your eye level above the top of the rifle where the scope mounts sit. This could be done roughly using a carpenters level and that will an idea of whether your body/neck size vs. rifle will want to go low, med or high rings.

When I first started trying higher mounts I used some styrofoam and just carved a place to hold the scope, then put the piece of styrofoam on top of the rifle, continuing to remove material from the bottom until I found the height I liked. Then had Marvin make up mounts for me in that height. Unfortunately, his mounts are no longer available, but you can get an idea and then purchase mounts as close to your needs as possible.

Some modeling clay would also work using that same method.

Mary, i dont know what your time-zone is, but im GMT +1.
Now then, do i actually need to shim my scope? Planning on using a Leupold VX3 6.5-20X40 EFR Target. Think it has a 50 MOA adjustment-range

I would not hesitate to put 2 thickness of BEER can under the back of the scope. You may need it or you may not but if you end up in some crazy game where someone sets some animals out at 150 m like they do in CO, you will be glad you did.
